Mixed Fruit Smoothie

This mixed berry smoothie recipe really does the trick with black currants, red currants, kiwi and oranges! Enjoy it several times a day and you will feel better in no time! You will need a high powered smoothie maker for this drink. (Such as a VitaMix or Blend Tech) If you don’t have one you can juice the fruit in your juice extractor.
Mixed Fruit Smoothie
1 cup blackcurrants
1 cup red currants
2 kiwifruit, peeled
2 oranges, peeled, seeded
1 T ground flax seeds
1 cup water
½ cup ice
Directions
Combine black currants, red currants, kiwi, oranges, ground flax seeds and water in your smoothie maker or high speed blender. Process for three minutes, until well combined. Add ice and process until smooth – another one to two minutes.
Lucky Charms Toffee Apples
When we think about doing great treats for kids we often fall back on some tried and tested recipes. They’re all yummy… but maybe could be improved on for that extra wow factor.
I’d like to introduce Lucky Charms Toffee Apples. Naughty but nice. The joy of these scrumptious toffee apples is that the cereal actually makes them easier to eat. They are great for kids birthday parties or an addition to bonfire night. I know someone took all the green four leaf clovers from the cereal and just used those for St Patrick’s day. Most of all, have fun!
So, very quickly, you need to make some toffee. This is pretty easy. Lay out a sheet of baking paper and place the apples on this, close to your stovetop. Get another backing tray and pour a flat layer of Lucky Charms Breakfast Cereals on the tray.
Pour 400g sugar into a pan along with 100ml water and pop the gas onto a medium heat. Dissolve the sure, then stir in 1tsp of vinegar and 4 tbsp golden syrup. Set a sugar thermometer in the pan and boil to 140C or ‘hard crack’ stage. No thermometer? You can test the toffee by pouring a little into a bowl of cold water. It should solidify straight away and, when removed, be brittle and easy to break. Basically, if you can still squish the toffee, continue to boil it.
Now, quickly dip and twist each apple in the hot toffee until covered. Don’t let any excess drip away, you need this. Then roll the apple over the Lucky Charms Breakfast Cereal (pressing down just enough to lodge them into the toffee)..
Finally, place the item on the baking paper to harder. The great thing about using Lucky Charms is that they toffee apple doesn’t stick to the paper either. Can be made up to 2 days in advance, stored in a dry place.
